My dad loves Boston Cream Pie, so of course I'm going to make him Boston Cream Pie Cupcakes for Father's Day. I ran into only one problem, I totally forgot to make them, so I had to make them that day right after church, which isn't the worse thing in the world. But I am so glad I forgot, because I have never made custard before, so my mom and mema helped me out with that one. I would have been totally confused when it asked me to temper the eggs lol. So the wisdom of tempering eggs has been passed on to the next generation in the family and I can now make custard (which my husband is very excited about). The cupcakes turned out amazing and my dad loved them and he wants them for every Father's day, always and forever.

Spring!
I love Spring! The smell of fresh cut grass, beautiful sunny days, blooming flowers all around....and allergies! :) This cake was totally Spring inspired from the design to the colors. The cake itself is a strawberry cake that is AMAZING, thank you Martha Stewart, and the icing is buttercream. The lady I did this for just told me to do something springy, and I believe I accomplished just that. It was my first time to make a "basket" out of icing, so yet again another challenge that was most welcomed. It turned out good, but I am sure with practice I'll be an amazing icing basket maker.
Tough ol' hussy
One of my friends, bless her heart, lost her dad and her mom within about 2 weeks of each other. She's been going through a rough time, but she is getting stronger each day. For her mom's funeral she wanted me to make a cake, because her mom looooooved cake. Awesome huh? No only did she want a cake, she wanted it to have raspberry filling (only one of my favorite flavors in the world). Well that brought on a challenge like no other since I've never made any type of filling what-so-ever, but this a journey of trying and discovering new things so I thought I would give it a shot. Oh my goodness! What an awesome scientific experiment, I loved it! Once I melted the frozen raspberries, I had the strain the seeds and I thought to myself, uhhhh is this going to be enough?? Well once I added the cornstarch/water mixture, it became enough! It was amazing! Baking is awesome, nuff said.
The best part of the cake though was the writing my friend wanted on it: "She was a tough ol' hussy". When she said that I was like ok you need to explain this one. She told me that when she was little her mom asked her, "when I die, what would you put on my gravestone", my friend replies to her "she was a tough ol' hussy" and that has stuck through the years. She wanted it with flowers on the top, because who doesn't love icing flowers right? So voila! A wonderful cake for a wonderful lady!

Cupcakes
Who doesn't love cupcakes? I am in love with these little cakes! Last night I made a chocolate cupcake with a marshmallow cream mixture in the center. They are so good and they were even better today than yesterday. They are really moist and dense, with a little marshmallow treat in the center. I have so many different recipes for cupcakes, that I am sure I have what you are looking for.
Big Show
My friend that I work with asked me to do a cake for her son that just turned 4. His favorite WWE wrestler is Big Show and she wanted a cake that she could put a Big Show character on. The base cake is a white cake and the little 6" round is a strawberry cake. Buttercream icing is used in between the layers and on the outside of the cake. This was my first experience dying icing, since I've worked at Sam's Club all these years, I'm use to having all the colors at my disposal, but now I have to do it myself. It took some time, but I think I got the colors right.

What Started It All
It may not look like something from Cake Boss, but it is my first tiered cake and I am really proud of it.
New Chapter
Hello, I'm Shelbi and recently I decided to start a new chapter in my life. I have been working for Sam's Club for 4 1/2 years as a cake decorator and always wanted to make my own cakes, but never had the means or the time to do so. I recently graduated from OUHSC and work as a x-ray tech in a couple of places and was working at Sam's club to supplement. I recently decided that it was time for a change, and although scary, I knew that I had the knowledge and now the means to start making my own cakes. So I took a leap of faith and quit Sam's to open myself up to new opportunities. Baking and decorating cakes has become a creative outlet for me and is something I thoroughly enjoy. With this new endeavor, I hope to not only bring more joy into my life, but to bring joy to others. There is nothing like seeing someone's face light up when you have brought their imagination to life. I welcome new opportunities and flavors to challenge my ability, so just ask and together we'll create the perfect cake.
