Tough ol' hussy

One of my friends, bless her heart, lost her dad and her mom within about 2 weeks of each other.  She's been going through a rough time, but she is getting stronger each day.  For her mom's funeral she wanted me to make a cake, because her mom looooooved cake.  Awesome huh?  No only did she want a cake, she wanted it to have raspberry filling (only one of my favorite flavors in the world).  Well that brought on a challenge like no other since I've never made any type of filling what-so-ever, but this a journey of trying and discovering new things so I thought I would give it a shot.  Oh my goodness!  What an awesome scientific experiment, I loved it! Once I melted the frozen raspberries, I had the strain the seeds and I thought to myself, uhhhh is this going to be enough??  Well once I added the cornstarch/water mixture, it became enough!  It was amazing!  Baking is awesome, nuff said.
The best part of the cake though was the writing my friend wanted on it:  "She was a tough ol' hussy".  When she said that I was like ok you need to explain this one.  She told me that when she was little her mom asked her, "when I die, what would you put on my gravestone", my friend replies to her "she was a tough ol' hussy" and that has stuck through the years.  She wanted it with flowers on the top, because who doesn't love icing flowers right?  So voila!  A wonderful cake for a wonderful lady!
